Halibut  

The halibut is one of the biggest bottomfishes. He is caught in most of the northern deeper parts of the North sea. They maximum weight is threehundred kilos and they can become about 2.5 metres long. The big fishes are frequently caught as a couple.


To fillet


Because these fishes are big, they are filleted by part of pieces.Firstly the tail and then the other parts .

  1. First we cut of the tail side with a firm knife diagonally.
  2. Put your knife up to the fins on the backbones and cut of the tail side.
  3. Make a incision in the middle from tail to head side above the big bone with a sharp (serrated) knife.
  4. Now it's easy. Put your knife flat on the bones on the middle and cut to the backside.
  5. Second side is the same.
