Halibut

The halibut is one of the biggest bottomfishes. He is most caught in the northern, deeper parts of the North sea. They maximul weight is about threehundred kilos, and they can become about 2.5 metres long. The big fishes are frequently caught as a couple.



To fillet


Because these fishes are big, they are filleted in four pieces. Firstly the tail and then the other parts .

  1. First we cut of the tail side with a firm knife diagonally.
  2. Put your knife up to the fins on the backbones and cut of the tail side.
  3. Make a incision in the middle from tail to head side above the big bone with a sharp (serrated) knife.
  4. Now it's easy. Put your knife flat on the bones on the middle and cut to the backside.
  5. Second side is the same.


Cheeks

  1. Remove the skin on the cheeks.
  2. Put at the gentle part beside the jaw and push your knife against the jaw.
  3. Keep on feeling with the jaw and only twist the head.
  4. Cuts it of to the nose and the eye.
  5. The other side is exactly the same.

Bellyfin
  1. Cut the fish into the hard part of the skin and cuts it of to the fin.
