John Dory

The dory is caught in the Mediterranean sea, golf of Biskaje and in the North sea around Norway. This dangerously looking fish with far extending mouth has a lot of thorns. Because of this it is cumbersome to fillet. For the experts he is a truth delicious fish. But in fresh conditions also a very expensive fish.

To fillet

  1. For this you need a flexible knife.
  2. Make an incision against the prickly back sides.
  3. Make on both sides of the belly fins and the gills an incision.
  4. Put your knife into the incision straight to the tail and cut down the gill.
  5. Cut down the fillet to the middle bone.
  6. Cut with the front of the knife a little above the belly bones.
  7. Cut down of the belly above the belly bones.
  8. Now you fillet the fish out the head to the tail.
  9. the other side is the same as the upper side.
