SoleThe sole is caught in the European seas from the Mediterranean sea to the north of the North sea and the golf of Biskaje. This fish is born as a pelagic fish, it is rolled over after course of time and becomes then a bottomfish.
To skin
- Cut the skin in behind the eyes on the hard part on top of the head.
- Press with the top of your knife in the incision and cut to the back side the skin of.
- Take the skin of with the hand or pincer, (both sides it same).
Large sole fillet (four fillets).
- Use a sharpen, flexible knife.
- Give an incision in the middle.
- Press your knife in the incision at the bones and fillet the sole out of the middle to the back side.
- The other side works the same.
