Sole

The Sole is caught in the European seas from the Mediterranean sea to the north of the North sea and the golf of Biskaje. This fish is born as a pelagic fish, it is rolled over after course of time and becomes then a flat-fish.


  1. Cut of the fins from tail to head.
  2. Remove the head and the calf.

To skin


  1. Make an incision into the skin on the hard part of the head.
  2. Put your knife under the skin and cut to the back fin.
  3. Takes of the skin right to the tail.
