SoleThe Sole is caught in the European seas from the Mediterranean sea to the north of the North sea and the golf of Biskaje. This fish is born as a pelagic fish, it is rolled over after course of time and becomes then a flat-fish.
- Cut of the fins from tail to head.
- Remove the head and the calf.
To skin
- Make an incision into the skin on the hard part of the head.
- Put your knife under the skin and cut to the back fin.
- Takes of the skin right to the tail.
