Sole

The soleĀ is caught in the European seas from the Mediterranean sea to the north of the North sea and the golf of Biskaje. This fish is born as a pelagic fish, it is rolled over after course of time and becomes then a flat-fish.


Remove the skin

  1. Make an incision into the skin on the hardly part of the head.
  2. Put your knife under the skin and cut to the back fin.
  3. Takes of the skin right to the tail.


Filleting the small sole

 

  1. Put the fins of the calf side over the beam.
  2. Cut with the hole knife, from tail to head.
  3. Cut it of to the middle.
  4. Cut with the top of your knife a little over the middle.
  5. Cut of the fillet to the back bones.
