SoleThe soleĀ is caught in the European seas from the Mediterranean sea to the north of the North sea and the golf of Biskaje. This fish is born as a pelagic fish, it is rolled over after course of time and becomes then a flat-fish. Remove the skin
- Make an incision into the skin on the hardly part of the head.
- Put your knife under the skin and cut to the back fin.
- Takes of the skin right to the tail.
Filleting the small sole
- Put the fins of the calf side over the beam.
- Cut with the hole knife, from tail to head.
- Cut it of to the middle.
- Cut with the top of your knife a little over the middle.
- Cut of the fillet to the back bones.
