Sole

The sole is caught in the European seas from the Mediterranean sea to the north of the North sea and the golf of Biskaje. This fish is born as a pelagic fish, it is rolled over after course of time and becomes then a bottomfish.


To skin


  1. Cut the skin in behind the eyes on the hard part on top of the head.
  2. Press with the top of your knife in the incision and cut to the back side the skin of.
  3. Take the skin of with the hand or pincer, (both sides it same).

Large sole fillet (four fillets).


  1. Use a sharpen, flexible knife.
  2. Give an incision in the middle.
  3. Press your knife in the incision at the bones and fillet the sole out of the middle to the back side.
  4. The other side works the same.
