Whiting

The whiting is caught from Iceland, Norway to the Mediterranean sea. Most of the whiting are caught in the North sea. These fishes live near the coast. With a big storm a lot of whiting is dropped onto the beach. In former days they were thrown in sea or they where taken for the cat. Nowadays we used them for baked fish.

To fillet (twice/flutter or English manner)

English manner (double )

  1. Make an incision behind the head.
  2. Cut into the belly side with the flat side of your knife, put your knife down on the bones and cut to the tail.
  3. Other side exactly the same.
  4. Cut of the bone beside the tail.
